Salt water taffy is a variety of soft taffy that is produced and marketed in Atlantic City, New Jersey, Jersey Shore area beginning in the 1880s.

Origins

The original invention of the candy has several different stories in circulation, possibly all apocryphal. One deals with assistants who replace freshwater with seawater - either through laziness or accidents. Others cite a storm that causes sea water to wash over candy, which consequently (and successfully) is marketed under the appropriate name. Joseph Fralinger popularized the candy by packing it and selling it in Atlantic City. Fralinger's first major competition came from Enoch James candy maker, who refined the recipe, made it less sticky and easier to open. James also cuts the candy into bite-sized pieces, and is credited with the mechanization of the "pull" process. Candy is also sold post orders; in 1926 the sheet music was commissioned by James under the title "Send Some Taffy Houses Today!"/Both the Fralinger and James stores are still operating on the Atlantic City sidewalk. Both companies have been owned and operated by the Glaser family since 1947.

On August 21, 1923, John Edmiston acquired a trademark for the name "saltwater taffy" (number 172.016), then demanded royalties from the company using his newly acquired name. He was sued for this request, and in 1925, the trademark was invalid because it was used in general.

Salt water taffy is still widely sold on sidewalks in Atlantic City (including stores dating back to the 1800s), nearby islands of Ocean City, and other popular beaches throughout the United States, especially Cape Cod and Atlantic Canada, as well as in Salt Lake City, Utah. Taffy is also distributed throughout the US to some specialty stores and markets, and other places where a variety of highly diverse and varied sweets are sold. It is also available for email ordering via Internet sources.

Materials

Taffy water salt consists of sugar, cornstarch, corn syrup, glycerin, water, butter, salt, natural and/or artificial flavor, and food color. Some examples of flavoring include vanilla, lemon, maple, banana, red extract, watermelon, raspberry or mint extract. Despite its name, taffy does not contain salt water (seawater), but it contains salt and water.
